For many years our mother and grandmother were pushing on preserving the original recipe of Cyprus halloumi.

Over the years, the change in the production industry was radical, resulting in multiple halloumi recipes and taste variations.

Now we know why they insisted!
Now it’s our turn to keep the original halloumi taste alive. It’s our commitment.

A recipe from our ancestors

Everything started with our grandma, Aphrodite, Nikis mother, who was making the traditional recipe of Halloumi. Everyone in the village loved Niki’s mom halloumi, and later Mrs. Niki decided to preserve the tradition. Mrs. Niki devoted years to follow and secure the whole production process of the original halloumi, and people were fascinated with this taste. Mrs. Niki, was then motivated by people’s enthusiasm for her halloumi recipe. So she decided to establish her own dairy company and distribute her famous halloumi recipe to the small market of Cyprus.

At this moment, Mrs. Niki is one of the last halloumi producers who preserves the original recipe with only sheep and goat milk. Although a small production, Niki’s Dairy exports the original Cyprus halloumi to other countries. 

Niki’s Dairy Products

fresh halloumi

Freshly made halloumi. Packed in vaccum bag for sealed freshness. Soft and full bodied, our halloumi can be enjoyed sliced, grilled, fried or grated for pasta.

mature halloumi

Mature halloumi. Aged halloumi with firm texture and extra saltiness. It is preserved in brine. Usually is consumed without being cooked. It is packed in vaccum bag to ensure the maturity and boldness of the taste.

sheep milk yogurt

Sheep milk yoghurt is packed in a plastic box. Yoghurt is a perfect accompaniment to most meals. Also, yoghurt can be consumed on its own as a dessert or snack.

fresh trahanas soup

A traditional soup base that is very well known in the eastern Mediterranean countries like  Cyprus and Greece. Bold taste, thickness and sourness are the things that make Trahanas a great soup dish. Trahanas soup can easily replace any meal of the day in the winter.

cyprus pastry cheese

Cyprus cheese is packed in a vaccum sealer bag for sealed freshness. It can be enjoyed sliced. Also, with our cheese you can make pastry for savory sweets. In Cyprus we make “Flaounes” (savory sweet) in Easter with our cheese.
